What does it take for a farm to be considered organic? Why does organic food cost more?

Brian Bates, owner of Bear Creek Organic Farm, suggests thinking about organic farming in terms of a broad system including biodiversity, soil health, and water quality. The biggest challenge? We don’t grow enough organic food in America to satisfy the demand.
