On this week’s The NOLADrinks Show, it’s our last broadcast on WGSO! After several years, we’ve decided to move to a podcast-only format and focus efforts on the Nitty Grits Podcast Network at the Southern Food and Beverage Museum. Thanks to WGSO for some great times! It’s just our time to move on!


With this episode, we’re joined by three good friends who are experts in the world of wine. We chat with Miriam Matasar and Darrin Ylisto of Spirit Wine, the fine Uptown wine shop, and Noah Bonaparte Pais, a wine industry veteran and terrific sommelier who is currently working with the new Senegalese restaurant, also Uptown, Dakar. We talk about natural wine, food pairing, taste some interesting stuff, and have a fun, wide-ranging chat!

Happy Holidays! It’s our last show of 2022! This time around on The NOLADrinks Show with Bryan Dias, we’re talking wine at Spirit Wine! We’re joined by the boutique wine shop’s new proprietors Miriam Matasar and Darrin Ylisto. We’re also joined by New Orleans-based sommelier Noah Bonaparte Pais.


We talk about several things in the world of wine including natural wine. Though not a true category in and of itself, we touch on some of the various production aspects that fit the description. We also take a deep dive into wine pairing with a lot of discussion about elevating your game and moving beyond the basic “rules” of the road.


Darrin and Miriam let us know about Spirit Wine, located on Magazine St. in Uptown, New Orleans. We talk about their selection and approach. They also let us know why they took the plunge, moving from other parts of the wine industry, into owning a wine shop.


Noah tells us about the new restaurant with which he is working, Dakar, also located on Magazine, Uptown. The spot is run by Chef Serigne Mbaye and features dishes inspired by his Senegalese upbringing. Noah is working with Dakar to put their wine list together, creating interesting pairings. This also informs parts of our pairing conversations.


Special note – though we have decided to pull the show from the radio, don’t worry! The NOLADrinks Show is not going anywhere! We are taking a bit of a break and will be back in early 2023 with a slight format change for this show along with our new show, The Social Side Show with Bryan Dias, coming soon, too!
