Eggplant - The Power of Purple

June 25, 2013

“The happiest omen for a New Year is first Mount Fuji, then the falcon and lastly eggplant.” ~ Japanese proverb (photo by Samuel Ascaso Piqueras)

Although the most common type of eggplant is large and dark purple, it comes in many sizes (2-12 inches), shapes (oblong to round), and colors (white to green to purple).

If you frequently add eggplant to your menu, you might want to consider growing it in your garden. If you give it lots of sun, warm temperatures and water you’ll produce enough of this vegetable to share with family and friends.

Today’s guest is Tim Baker, horticulture specialist for University of Missouri Extension. He has lots of information about the eggplant and tips for growing it in your home garden.
