I sat down with Mighty Joe Yim at Cali Sandwich and Seafood for some Pho and sticky rice. We were in Houston Texas to talking about his work in BBQ as a pit master. Joe has put an insane amount of work into the last two years. He currently smokes hundreds of briskets a week at Truth BBQ and if you ask him, he's still figuring out a few tricks.
