9:14pm – A few months back I introduced you too Chris Young, the CEO of Combustion, Inc. You might recall that they make an internal thermometer that predicts when your food will be done and the probe also contains 6 internal sensors ensuring the “core” is properly chosen for proper cooking times. Tonight, Chris joins me again to talk about a recent steak experiment he tried. We all know Sous Vide and we all know Reverse sear. Chris decided to pit the two against each other to see which operation actually yields the better cooked steak. We will also talk about a follow up experiment he did with “one flip steak” VS. “constantly flipped steak” and we will see what his results were on that too!
