Charcoal Chu, chasing the perfect cake
Charcoal arrived in Hong Kong from a small village in China at age 11. Charcoal began his career in the kitchen of a Japanese restaurant, he had a passion for baking and taught himself the tricks of the baking trade. After working in Shanghai he set up his own bakery and coffee shop in the rapidly changing suburb of Sai Ying Pun.
We reflect on his journey of transitioning to Hong Kong as a young teenager, moving to Shanghai for work, chasing dreams and respecting food.
