French Toast with Honeyed Bananas

In my books French toast is one of the best Saturday breakfast dishes ever! When you can wake up just a little bit later and you actually have time to prepare something that is not cereal or an apple on the go. No, Saturday morning after a whole week of working hard you can reward yourself with a decent breakfast because you deserve it! So set your table or tray (for those who don’t mind honey and crumbs in bed;) and start cracking some eggs!
French toast is day old bread that has been dipped in an egg and cream or milk mixture and fried on both sides in a pan. This dish can be enjoyed with sweet or savoury toppings.

French Toast with Honeyed Bananas
(Serves 4)
8 Eggs
50 ml Cream / Full cream milk
pinch of Salt
about 400 g Ciabatta loaf
2 tbsp Sunflower oil
4 Bananas
about 4 tbsp Honey (more if you want to!)
½ tsp ground Cinnamon
Method:
- Whisk the eggs, cream and salt together. Slice ciabatta into 2 cm thick slices. Pour the egg mixture into a small bowl and dip the bread slices into the egg mixture for about a minute on each side.
- Heat a pan on medium heat with sunflower oil. Fry the soaked bread until golden brown on both sides.
- Slice the bananas and arrange it on top of the French toast. Drizzle with honey and a sprinkle of cinnamon.
Tips:
- For a reduced fat alternative, cream may be substituted with skim milk and sunflower oil with cooking spray.
- The strong structure of the ciabatta bread absorbs and holds on to the egg quite well but any other white bread can be used instead.
- Older bread works better than fresh bread as it soaks up more of egg mixture without breaking.
- For extra protein and energy spread peanut butter onto the French toast after frying.
- The addition of crispy bacon creates a sensory feast for meat eaters.
