The Chef Who Almost Died From Eating (Chef Hubert Keller)

July 03, 2015

The Chef Who Survived Food Poisoning, Hubert Keller (HubertKeller.com), is one of the world's great chefs and he has a cool accent. He's cooked for the president, Make-A-Wish Foundation kids, and zillions of tourists in Las Vegas, where he runs the amazing Fleur and the acclaimed Burger Bar in Mandalay Bay hotel. Interview starts at 3:20 minutes. In order, we talk about his nitrogen-frozen ice cream (the best I've ever had), flaming absinthe, Americans' increasing sophistication for food and beer, his DJing, chefs as entertainers, the end of snobby chefs, cooking in the White House and undergoing Secret Service checks, French cuisine surviving in San Francisco in the 1980s and Vegas in the xenophobic early 2000s, foodie movies, antique guns, suave French people, Freedom fries, Bleu Blanc Rouge, how his wife and he view America as home, his cooking show, Make-A-Wish, Batkid, almost dying from food, and my request that he supply me with a table with an exercise bike attached so I get more food only after I've burned calories.
