Today, we’re honored to welcome Carole MacDonal, who, alongside her husband Chef Santos McDonal, has been a pivotal force in transforming the Paso Robles culinary scene. Nearly 15 years ago, they opened Il Cortile Ristorante. Il Cortile took SLOCAL’s and Paso’s culinary reputation to the next level, inspiring a new era of fine dining in town. Now, with their latest venture, Parchetto, located on 1234 Park St, Downtown Paso, aims to merge the rustic elegance of old classic chophouse with the fresh vibrancy of California flavors. Carole will share her and Santo’s  journey and the inspiration behind Parchetto.
