Kathy Davis, is a plant-based lifestyle coach, recipe developer, and CEO of VegInspired, where she helps people successfully transition to a plant-based diet with practical tips, strategies, and easy & delicious recipes without added stress in the kitchen. 

Kathy has a master’s degree in Education and years of coaching experience. She achieved her goal of losing 35 pounds on a plant-based diet in 2020 after setting a goal to eat more plants and less processed foods. She has the strategies to help you achieve your goal! She learned the ins-and-outs of cooking and creating delicious plant-based recipes with whole-food ingredients, alongside her husband John.

They are currently traveling in their fifth-wheel RV, with their 3 cats across the United States on a mission to visit all the National Parks.

In this episode, Kathy shares with us a little about her RV life and how she has managed to remain on a whole food plant based diet. She offers some practical tips that will help you remain on a plant based diet.
